Air fryer nachos with melted cheese, taco meat and a zigzag of sour cream

These are for the nights when you're hungry, but not make-a-whole-dinner hungry. There's no real recipe here, just a method: chips in the air fryer, whatever leftovers you've got on top, cheese on everything, five minutes, done.

My version used leftover taco meat and some rice because that's what was in the fridge. Chicken, peppers, jalapeños: honestly, the world is your oyster. Eat them straight out of the air fryer liner. Nobody's watching.

Why this works

  • Scoop-style chips hold toppings without snapping in half.
  • The air fryer melts the cheese fast and keeps the chips crisp. The microwave makes them soggy.
  • Cheese goes on last so it glues everything together.

What I'd swap

  • Any leftover protein works: chicken, steak, pulled pork, beans.
  • Add peppers or jalapeños if you want some crunch or heat.
  • Got leftover rice? Toss it in. I did.
  • No queso? Just use more shredded cheese.

  • Leftover rice (optional)A spoonful or twoAbout ¼ cup
  • Diced onionA small handfulAbout 2 tablespoons
  • Shredded cheeseEnough to cover everything, then a little moreAbout ½ to ¾ cup
  • QuesoA few spoonfuls, dotted aroundAbout 2 to 3 tablespoons
  • Sour creamOne confident zigzagAbout 2 tablespoons

How to make it

  1. Line the air fryer basket if you like (a silicone liner makes cleanup easy) and pile in the chips.

  2. Top with the meat, rice, onion and any extras, then cover it all with cheese and dots of queso.

  3. Air fry at 350°F for about 5 minutes. Peek in: when the cheese looks melty, they're done.

  4. Zigzag sour cream over the top and eat right away.

Using cold leftovers? Warm the meat in the microwave first so everything comes out hot.
